Rinse racks of lamb in water and pat dry
Lightly coat lamb racks in Worcester sauce
Sprinkle salt and freshly cracked pepper over all, especially on the fat side.
Finely chop fresh garlic and fresh rosemary and apply liberally all over lamb racks.
Interlace rib bones; joining two racks together. Place on a raised rack over a baking pan, bones up.
Add 1 cup beef broth to the bottom of pan.
Place in preheated oven at 475 degrees for 8 -10 minutes, then leave oven closed and reduce temperature to 325 degrees.
Cook for about 20 – 25 minutes. Turn off and let lamb racks rest for about 8 – 10 minutes.
Slice for service, garnish with fresh rosemary sprigs and enjoy!
