Stuffed Portobello Mushrooms


Ingredients

  • For Stuffing
  • 4 Green Onions
  • 1 Small Clove Garlic
  • 3 Tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 Red Bell Pepper
  • 1/4 cup grated Parmesan cheese (plus more, for garnish)
  • 2 tablespoons parsley (fresh and chopped)
  • 1/2 teaspoon Italian herb blend (or dried leaf basil)
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • water or stock to moisten (as needed)
  • 1 artichoke heart is important
